Here's an easy and delicious Crockpot Jambalaya recipe you can try!
Ingredients:
- 1 lb smoked sausage (like Andouille, sliced)
- 1 lb chicken breasts (cut into bite-sized pieces)
- 1 can (14.5 oz) diced tomatoes (drained)
- 1 can (8 oz) tomato sauce
- 1 cup bell pepper (chopped, any color)
- 1 cup celery (chopped)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 ½ cups chicken broth
- 1 tsp Cajun seasoning (or to taste)
- 1 tsp dried thyme
- ½ tsp paprika
- ½ tsp salt (or to taste)
- ½ tsp black pepper (or to taste)
- 1 cup long grain rice (uncooked)
- Optional: 1-2 cups shrimp (peeled and deveined, add in the last 30 minutes of cooking)
Instructions:
-
Prepare the ingredients: Chop all your vegetables (onion, bell pepper, celery, garlic) and slice the sausage and chicken into bite-sized pieces.
-
Combine everything: In your Crockpot, add the smoked sausage, chicken, diced tomatoes, tomato sauce, bell pepper, celery, onion, garlic, chicken broth, Cajun seasoning, thyme, paprika, salt, and black pepper.
-
Cook on low: Stir everything together and cover the Crockpot. Cook on low for 4-5 hours or high for 2-3 hours, until the chicken is cooked through and the vegetables are tender.
-
Add rice: Once the chicken and vegetables are cooked, stir in the uncooked rice. Cover and cook on low for another 30-45 minutes until the rice is fully cooked and the liquid has been absorbed. You may need to add a little more broth if it looks dry.
-
Optional shrimp: If you’re using shrimp, add them in the last 30 minutes of cooking and let them cook through.
-
Serve and enjoy: Once everything is cooked, give it a good stir, taste, and adjust seasoning if needed. Serve hot and enjoy your easy Crockpot Jambalaya!
