Super Quick Spicy Pork Noodle Soup

Ingredients:

  • 3 tbsp vegetable oil

  • 400g (14 oz) pork mince (ground pork)

  • 3 garlic cloves, finely chopped

  • 2 tbsp Korean gochujang paste (adjust to your spice preference)

  • 2 tbsp Chinese black vinegar (or regular white vinegar)

  • 2 tbsp soy sauce

  • 6 cups chicken stock

  • 100g (3.5 oz) baby spinach

  • 400g (14 oz) cooked noodles (your preferred kind)

  • Finely sliced spring onion (scallions), to serve

Instructions:

  1. Brown the Pork: Heat the vegetable oil in a large, deep saucepan over high heat. Add the pork mince and spread it out. Allow it to sear for about 5 minutes or until you get a nice golden-brown color on the pork. Then, break it up with your spatula.

  2. Add Aromatics and Spice: Add the finely chopped garlic and stir-fry for another minute until fragrant. Then, stir through the gochujang paste.

  3. Simmer the Soup: Add the vinegar, soy sauce, and chicken stock. Bring to a simmer for 2-3 minutes.

  4. Wilt the Spinach: Add the baby spinach and cook for a further minute or until the spinach has wilted.

  5. Serve: Divide your cooked noodles among four serving bowls. Ladle the soup mixture over the noodles. Top with finely sliced spring onions and serve immediately.

If you prefer a Spicy Pork Noodle Stir-Fry instead of a soup, here is a simpler sauce idea:

  • Sauce: Combine Hoisin Sauce, Dark Soy Sauce, Lime Juice, and White Pepper. Use Chilli Oil (like Chiu Chow Chilli Oil) to fry the ginger, garlic, and ground pork for the main source of heat and flavor before adding the sauce and noodles.
