✅ Ingredients:

  • 1.5 lbs ground chicken

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup breadcrumbs (Italian seasoned or plain + Italian seasoning)

  • 1/2 cup milk

  • 1 egg

  • 4 cloves garlic, minced

  • 1 small onion, finely chopped (or 1/2 tsp onion powder)

  • 1/4 cup chopped parsley (or 1 tbsp dried)

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp dried oregano

  • 1/2 tsp crushed red pepper flakes (optional)

  • 1 cup shredded mozzarella cheese (optional, for filling or topping)

🔥 Garlic Parmesan Topping:

  • 2 tbsp butter, melted

  • 1/4 cup grated Parmesan

  • 2 cloves garlic, minced

  • 1 tbsp chopped parsley (fresh or dried)

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

  2. Make the meatloaf mixture:

    • In a large bowl, combine ground chicken, Parmesan, breadcrumbs, milk, egg, garlic, onion, parsley, salt, pepper, oregano, and red pepper flakes.

    • Mix until just combined. (Do not overmix or it can become tough.)

  3. Optional: Stuff with cheese:

    • Take half of the mixture, shape into a bottom loaf.

    • Sprinkle shredded mozzarella in the center.

    • Top with the remaining meat mixture and seal edges.

  4. Shape and bake:

    • Form into a loaf shape on the baking sheet or press into a loaf pan.

    • Bake uncovered for 45–55 minutes, or until internal temp reaches 165°F (74°C).

  5. Prepare topping:

    • While baking, mix melted butter, minced garlic, Parmesan, and parsley.

  6. Add topping & finish baking:

    • In the last 10 minutes of baking, spread garlic butter topping over the loaf and return to oven.

    • Broil for 2–3 minutes at the end for a golden crust if desired.

  7. Rest & serve:

    • Let rest 5–10 minutes before slicing. Garnish with extra Parmesan and parsley if desired.
